Mamgu's Bara Brith

Ingredients
- 300 gms(10 oz.) sultanas/raisins/currants
- bowl of hot water
- 90 gms (3 oz.) brown sugar
- 375 gms (12 oz.) self-raising flour (brown or white)
- 1 tsp. mixed spice
- 1 large egg
Instructions
- this is my Ambrosia ^_^ translated means 'Nanna's Speckled Bread,' and it is the most delicious thing in the world. i could quite happily live on it. anyway, on with the recipe.
- soak the dried fruit in the water and leave overnight.
- next day, set oven to 350 degrees 'f', grease and line a loaf tin (or any tin depending on the shape).
- strain liquid from fruit and, but strain it into another bowl as you'll need the liquid for later (see below).
- mix fruit with egg, flour, sugar and spice, adding liquid until mixture is a soft dropping consistency. then pour into tin.
- bake for 45 to 55 minutes until risen and firm to the touch.
- slice it thinly and spread a little butter to serve.
