Jason's Chicken Salad

- When Hercules, Jason, and Iolaus are left to run Kora's Inn on their own, Jason mans the kitchen while Hercules and Iolaus act as the waitstaff. However, it turns out he can only make one thing - chicken salad.

Ingredients
- fusilli corti noodles (corkscrew-shaped)
- 1/2 cup mayonnaise or Greek yogurt
- 1 tablespoon lemon juice
- Salt and pepper
- 2 cups chopped, cooked chicken meat ((Note: Ty recommends using chicken thighs for more juiciness and robust flavor))
- 1 stalk celery, chopped
- 1/2 cup blanched slivered almonds (optional)
- Romaine lettuce (whole leaves)
- A sprig of parsley
Instructions
- Boil a pot of water. Cook the noodles, then drain them. Rinse with cool water until the noodles are cool, and drain them thoroughly.
- Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Keep a very close eye on them so they do not burn
- In a medium bowl, mix the mayo (or yogurt) and lemon juice.
- Combine the dressing with chicken, celery, noodles, and almonds. Salt and pepper to taste.
- Serve on a bed of freshly-washed romaine lettuce leaves, with a sprig of parsley to make it look festive.
