Recipe
This recipe, meaning "Grandma's Welsh Cakes" was contributed to the Young Hercules University by cadet Aimee.
Ingredients
- 8oz (225gm) of plain flower
- 1 level teaspoon of baking powder
- Pinch of salt
- 2oz (50gm) of butter
- 2oz (50gm) of lard
- 3oz (75gm) of caster sugar
- 3oz (75gm) of currants
- 1 egg
- 2 tablespoons of milk
Instructions
- heat a heavy-based frying pan, or griddle if you're posh.
- sieve the flour, baking powder and salt into a bowl.
- cut up the lard and butter and add to the bowl.
- mix with fingertips until mix looks like breadcrumbs.
- stir in the sugar and currants.
- beat the egg and add it to the mixture, along with the milk to make a firm, rollable dough ball.
- roll out to and cut shapes using a shaped cutter.
- bake on the frying pan for about 3 minutes either side.
- leave cool and spread a little butter on one side. but they are best eaten warm with melted butter.
