Recipe

This recipe, meaning "Grandma's Welsh Cakes" was contributed to the Young Hercules University by cadet Aimee.

Ingredients

  • 8oz (225gm) of plain flower
  • 1 level teaspoon of baking powder
  • Pinch of salt
  • 2oz (50gm) of butter
  • 2oz (50gm) of lard
  • 3oz (75gm) of caster sugar
  • 3oz (75gm) of currants
  • 1 egg
  • 2 tablespoons of milk

Instructions

  • heat a heavy-based frying pan, or griddle if you're posh.
  • sieve the flour, baking powder and salt into a bowl.
  • cut up the lard and butter and add to the bowl.
  • mix with fingertips until mix looks like breadcrumbs.
  • stir in the sugar and currants.
  • beat the egg and add it to the mixture, along with the milk to make a firm, rollable dough ball.
  • roll out to and cut shapes using a shaped cutter.
  • bake on the frying pan for about 3 minutes either side.
  • leave cool and spread a little butter on one side. but they are best eaten warm with melted butter.
