Reuben Casserole

But I decided to give it a try and wouldn't you know it...I liked it! I don't like about half the ingredients in this recipe but, believe me, it's totally delicious.
I decided to post this recipe today because I heard somewhere that you're supposed to have sauerkraut on New Year's Day to have good luck throughout the year. So try it and good luck in the coming year.
Ingredients
- 2 pounds of sauerkraut
- 16 oz of corned beef
- 16 oz of mayonnaise
- 8 oz of shredded cheddar cheese
- 8 oz of shredded swiss cheese
Instructions
- Mix together sauerkraut, corned beef, mayonnaise, and half the cheese in a bowl.
- Place in a casserole dish and put the remaining cheese on top. Put in oven at 350 until cheese is melted on top (usually about 20-30 minutes).
- Serve hot, on mini rye bread or crackers
