  • This tomato casserole was apparently quite common in the Thracian region, which included the northeastern corner of Greece.

Recipe

This recipe was found by Ty.

Ingredients

  • 2 3/4 tbsp olive oil
  • Handful of fresh flat leaf parsley
  • 1kg of firm ripe tomatoes
  • 1 tsp caster sugar
  • 45g (approx 1.5 oz) white breadcrumbs
  • 1 tbsp paprika
  • Seasoning

Instructions

  • Preheat the oven to 356°F
  • Grease a baking dish with 1 tbsp of oil
  • Sprinkle the dish with a generous helping of chopped parsley
  • Slice the tomatoes and arrange in the dish so they overlap
  • Sprinkle the tomatoes with seasoning and sugar
  • Mix breadcrumbs together with remaining oil and paprika
  • Sprinkle breadcrumb mix over top of tomatoes
  • Cover dish with foil
  • Bake in the oven for 45 minutes, remove the foil for the last 10 minutes of cooking
  • Garnish with a sprinkling of parsley and serve with a dollop of sour cream or yogurt
